Do You Fill Your Sheet Cakes?

I have to make 3 12x 18 sheet cakes for the school PTA Parents night out fundraiser, and I was wondering if most people fill them or not? It's going to be their dessert after dinner and I thought they would be better filled.

Also, they were going to get them from Sam's Club, but I told them I would do them for $30.00 each and they would be much better. They just want them frosted plain with a border. Do you think I should have not charged them and just donated them? Originally it was for 6 cakes but they didn't sell as many tickets, so they cut it to 3 cakes.
Anyways, any thoughts would be appreciated. Thanks!

I use shallow sheet pans to bake the cakes, then they can be leveled, filled and stacked without the torting cut. It works for me. I like most cake to have filling, or extra icing. The sides of the sheet pans are not straight, so you have to trim, or use a little extra icing on the sides.

I think that $30 for a 12x18 is a bargain price. I prefer a filling in my sheet cakes but it is an extra expense for you-- single layer sheet cakes would still be good-- its the same as cupcakes in my mind. Good luck!

Thanks elvis! I was just second guessing myself in charging them. They were all fine with paying Sam's Club so I guess I'll stick with what I originally told them.
