Hi all. I just signed up and must say it's a great site and there is loads of info on the forum. Thanks. Quickly about me. I did my cook apprenticeship about 12 yrs ago. During the final year became the 'sous chef' of a full service hotel. After that became a food and beverage manager of a 36 hole full service golf club. From there went on to manage a food service operation in a university. Now have a great cooking/supervisor job that pays very well (double what I was making) So I have paid my dues in this industry (the looooong hours and numerous days in a row without a day off) and have finally been rewarded. I have some recipes and info which I picked up along the way I will be passing on

1. Blurry vision

3. Cramped Fingers
4. Deafness (at least it appears that way to other people, because they can't get your attention!!)
5. Insomnia (wondering what everyone else is posting and decorating!!)
6. Spontaneous laughter
7. Lost time
If any of these symptoms appear -- push away from the computer!! Immediately!! After that - you're on your own because I don't think any of us have made it through rehab from our addiction!!

Tripletmom yes that is a carved pumpkin and I do them myself. I came to this site because I wish to start doing some cake decorating. I have the experience of making them but haven't done very much decorating. Always had someone whose specialty it was. Any way here is a link to some of my other pumpkins. Have you ever been to a site called Elegantcheesecakes.com? It's a company that specializes in beautifully crafted cheesecakes decorated like most of us decorate regular sponge-type cake. She does a lot of work with "chocolate plastic" melted chocolate combined with fondant-type ingredients. Her cakes are really impressive. You might want to check it out.
