i am so aggrivated with these stupid cookies! i made a batch of the NFSC. i was planning on making st.patty's day cookie bouquets. no where where we live have clover cookie cutter. so i drew up some cute little clovers 3 1/2 in X 3 1/2. made my stencil, and cut them out on my rolled out cookie dough. i used a small wooden dowel rod, little smaller than 1/2 in thick for measuring my dough height. it was a pain having to hand cut the cookies, the sides were not smooth. so then i read the article on making your own cookie cutter from the aluminum flashing. went to the store and got the material. well, i could get the stuff to bend in the right shape. so i stuck with the ones i had cut on with the knife. put the sticks in, put them in the fridge to chill, put them in the oven, they are not finished cooking, but at the moments they have spread to 4 1/2 x 4 1/2 in! and they do not have the "sharpness" of the lines i started off with. they look more like a wobby circle, instead of a cute little clover!!!!!!
what the heck am i doing wrong??!!

Hmmm....I have never had a problem with my NFSC spreading after chilling. Did you preheat your oven for at least 30 minutes?
Did you leave the raw cut out cookies out of the frig while you went to the store? Maybe the dough warmed up too much before you put them in the oven.
i preheated my oven for 30 minutes, should i freeze the cookies. i did not leave them out, but maybe the were not in the fridge long enough?? i was thinking that maybe the cut out i made maybe was too close between the clover leaves. not sure how to word what i just said. maybe the gaps between each clover was too close together??
so if they do like they are suppose to, then that shouldnt matter should it. the shouldnt not spread out like they did?

Freeze the cutouts for about 15 min or so. Remove the cookie sheet and place it directly into the oven. That should slow the speading
it called for 2 cups butter. that is 4 sticks, right? please tell me it is
Yup. You did use real butter, right? Not margarine?
My experience with these is that they spread almost NONE. The edges remain sharp and detailed.
Yes, I think the flour will help. This has GOT to be a mis-meaurement thing. Maybe you lost count or something. Six cups is a lot of flour! ![]()
I've made NFSC a bunch of times, and it's never spread hardly at all. Once chilled, it is kind of on the dry, crumbly side and hard to roll out.
One last thought...did you maybe sift the flour before measuring it? That would give you a smaller quantity of flour and might contribute to unbalance in the recipe.
