Icing For Wedding Cake??

o.k. i got a call from a gentleman who wants to order a birthday cake for his wife. he tells me that she wants "wedding cake icing". i'm thinking royal icing, but that stuff dries hard. all the wedding cakes i've done have been with buttercream icing. does anyone know of any other icing used for wedding cakes...or what she is asking for??? icon_confused.gif

I wonder if he means fondant? thats the only other frosting I can think of that is common to wedding cakes besides buttercream...

Maybe ask him for more details? (taste, texture, etc) he is looking for?

there is an icing called wedding cake icing. Its very light and not sweet at all. Unfortuantly I don't have the recipe for it. I was just at a friends wedding and her aunt who did the cake used that icing on it she was supposed to give me the recipe after everything settled down but I did not get a chance to get it from her.

that is almost exactly what i used. instead of using egg whites, i used meringue powder. thanks all. icon_lol.gif

Here is my mother's "wedding cake icing" recipe.

2 cups crisco (creamed well)
2 lbs powdered sugar
1 tsp vanilla extract
1/8 tsp salt
3 to 5 ounces of extremely hot water.

Cream Crisco, then add powdered sugar and salt, before you start mixing measure 3 ounces of extremely hot water (she used baby bottles to measure the ounces) and add Vanilla to water. Pour on powdered sugar and start mixing. Add 1 ounce of hot water at a time until you get the consistency that you want.

You can also add 1 tsp of almond extract if you like the almond taste.

I would have to thank my mom for getting me interested in cake decorating. She was completely self taught and made wonderful wedding cakes when I was growing up.

Is he an American? Fondant is a recent fad in America. If he's too old for fondant to have been on his own wedding cake I would guess he meant royal.

to be on the safe side ask .....

Just casually bring up that your wedding icing is a buttercream recipe..... and that different decorators use diffent things.....is that what he wanted???

I think I would probably ask. I know that I use my buttercream icing as my wedding cake icing. I think in these days decorators do a variety of things...all of which could be classified as "wedding cake icing." icon_smile.gif

I would guess buttercream in America too! Fondant is just taking off especially in the Midwest! I have someone who wants wedding cake (buttercream icing). Good Luck and he can probably describe it to you.

"Around Here"......that most likely means buttercream with almond flavoring. Don't aske me why! Fondant is still a naughty word here... LOLOLOL! We're working on this........................

I'm thinking buttercream icing, fondant icing usually people peel off. I have more brides to say first thing "I don't want that fondo stuff". Call him back and just ask.
