Personally, I would just put thin layers of cream cheese icing (I prefer it to be not that sweet) between the layers. If you want to make some other type of filling I would sugest searching the recipes on this site, but maybe someone else can give you a better idea. Good luck! I use the crusting cream cheese recipe from here. It is very good. As long as everything is at room temp when you start it crusts great. I add some toasted, chopped pecans to the cream cheese icing to make a filling and then I torte both layers and put a thin layer of the filling on each. Yummy! I also use the carrot cake recipe from Cake Mix Doctor that is great!
To toast the pecans-oven 325 for 10 mins!!
