English Fruit Cake People Question Re Marzipan

I make my marzipan (or is it really almond paste, dont know the difference) with almond sugar and eggs. is this almond paste or marzipan-
if I bought it would it use the raw eggs or do they do somehting different to it. only thing is I dont like the taste of the stuff you buy- to chemically or soemthing
anyone know ![]()
I thought only Marzipan contained the sugar and that Almond Paste was not yet sweetened, but just the paste in its pure form?

You will see that this chef uses the words almond paste and marzipan to refer to the same thing.

They both contain the same ingredients. Almond paste and Marzipan both contain sugar. Marzipan contains more sugar whereas Almond paste contains more almonds.
And yes, some people use almond paste and marzipan to mean the same thing.

Not sure this helps, but here is a URL for the American Almond Products Co, which makes both Almond paste and marzipan. In the Home baking section of this website, the almond paste is in 15 oz cans for $10.95 and the marzipan is in 16 oz cans for $8.95. so, at least for this company, tthey are not the same.

Note that I have purchased both of these products from Pfeil and Holing for $5.00 per can and that their website still posts these prices. Pfeil and Holing sells wholesale to anyone. Just wanted to mention ths so no one spends more than they have to if they want this product in small cans. The marzipan does have a preservative. I don't have any almond paste to check.
In The Cake Bible, Rose Levy Beranbaum says that almond paste in the US "usually consists of 25 to 35 percent sugar (some of which is invert) and sweet and bitter almonds...Almond paste is used to make marzipan by adding additional sugar." In the book there are recipes for "Qunitessential marzipan," "Marzipan for modeling," and 'Pistachio Marzipan" None of her recipes contain eggs. The can of marzipan I have in my cupboard does not contain eggs either, though I remember years ago making marzipan and using egg whites.
