Cracking Gumpaste

Hello,

I have made gumpaste using the wilton Gum trac... I could not find glucose so I used light corn syrup instead. My gumpaste then takes more sugar than indicated in the recipe on the box and worse than that, it is cracking. I did use some cornflour mixed with sugar to roll it as well as it was much too soft.
Anybody can advise on what to do? I have a large amount left to mix with sugar still.

if it is cracking,it is too dry. whyare you rolling it in the cornstarch?

you should let the stuff sit overnight (well wrapped of course) before using it.

Thank you for your reply. Actually, I made it since early this morning and have let it rest for more than 9 hours before starting to use it. I used some cornstarch as I did not have any sugar left. Tomorrow, I will buy some more.

I think the problem is causes by the substitution of glucose for corn syrup. I just don't know how to fix it.

Hmmm, I think you will need to get your hands on some glucose, I am not quite sure if the cornsyrup will do the trick. Also, stick to the cornstarch when rolling out your gumpaste. Icing sugar will make it sticky.

I roll it out using a litle bit of crisco on my board. the cornstarch or the powdered sugar will dry it out too quickly to work fine detail.
