When you talk about forty cakes, do you mean 40 different orders? or do you mean that one wedding cake with 4 layers means 4 cakes.
I just don't see how you can make 40 cakes in less than a week, cause most cakes are for the weekend so you must start decorating on wednesday tops, I can do 10 fondant cakes varying from layered to non layered in a week, and I'm very fast. 40 cakes made by one person alone?

What do you mean by no plastic?




I don't have plastic deco pack kits to put on top of the cakes. All our cakes are cut out or carved from sheetcakes. The decorations on top are piped using bc or made from fondant.

Sometimes the customer will bring me a plastic doll or some kind of critters and that saves me a lot of time.

40 cakes is a mixture of stacked, round, or party cakes.

certainly not all wedding cakes.

i don't cover in fondant....if i need fondant accents i do that early in the week...and have them dring on the rack.

the most i've decorated in 1 day was 55, i was working for someone else...and it nearly killed me.

most of my cakes are for saturday...i have them all iced friday eve, put them in the cooler, and ready to decorate by saturday.

about half my orders are small....1/4 sheet party cakes.....so that makes sense now doesn't it?

i'd like to get into only the fancy bigger cakes...but this is my only income, i'm a single gal just tryin to "pay the rent".
