Or have you noticed that when you make your MMF a color, say, red, black etc. The consistency becomes weird. My white MMF is always nice, but when I add color it is not as smooth looking, any tips, or am I doing something wrong?

I too have noticed this in my MMF and my Satin Ice too! I have heard to avoid this to use the powdered colors to avoid texture change.

Our local cake store has powdered red, but that's it.

Perhaps you are adding too much color or not kneading enough? I had that problem when I first colored fondant -- it became kinda gooey. But, I haven't had that problem lately. I add a little at a time and really knead it in there. I flatten the ball, put a stripe on it, fold it over and then pull the fondant like taffy until the color gets in well. Then I knead. I guess you could also let the fondant rest a bit first.

But, I really remember that my problem was that I was adding too much color.

Hope this helps.

Sarah

I just made red and black MMF this last weekend for my ladybug cake. It does get gooey. I just added tiny touches of powdered sugar to it until I got it back to a nice consistency.

Then when I roll it out it lightly grease the rolling pin and mat. It works just fine for me.

Maybe add more powdered sugar to it when this happens. Or you might want to get it all mixed and colored. then let it sit for a little while and let it get it's act together.

Not sure where to find powderd colors, but here is what I do to my mmf to help with texture and elasticity: I add the color to the melted marshmallow instead of knedaing the color in, and, I add 1-2 tsp of light corn syrup. The corn syriup helps w/ elasticity and smoothness.

I'm pretty sure either intotheoven.com or cakesbysam.com has it one or the other.

I have done the same types of things.....added more powdered sugar....a bit of shortening....it really helps...but i have also noticed that certain brands of marshmallows seem to do better than others (in my opinion)....

ps luv2cake congrats for the baby on the way (from a fellow kansas Citian)

Normally when I color my fondant I add it to the marshmallows, but if I need More than one color I have to knead it in, which is what I did with the red and black. So I know I'm kneading it and I only added enough color to get the shade I needed, I used Americolor, super black and super red. Maybe the powdered color is the trick. I certainly don't like the texture I am getting with the gel colors.

I read in some book (Collette or Toba or someone) that adding more PS and more Crisco can help and to knead as long as you can...
