Well, I got a somewhat surprise visit from the inspectors today. They gave me a couple hours notice. Luckily, my house is quite clean normally or I would of been in trouble! They came in looked around the room (not opening any cupboards or anything) and said everything looks great. I was so excited. I also found out that if I would eventually like to have a separate kitchen, I don't have to have a separate septic or any at all I can use my home bathroom. They require you to have stove, fridge, 2 bay sink and a handwashing sink that's it. So it looks like eventually I can have building outside without it costing a lot of money!! Yeah. I'm just so excited!!! ![]()
Oh and my kids acted like angels - I was shocked how good they actually behaved!!! ![]()
Can I ask why you need a three bay sink, or a two bay with a seperate washing sink? Does it all have to do with chemicals or cross contamination?
That's the one thing I'm going to get in trouble for when I go for my "legal" inspection with my home bakery. I have a seperate area, (I took over the two bay garage) I have stainless steel tables, sealed containers for all my products, a fridge, freezer, two residential ovens and no pets access the area. You have to use the bathroom upstairs though. Anyway, I only have one huge slop sink that I use for everything. Will I get shut down?? I even have two "emergency" doors, plus fire extinguishers and alarm! I'm thinking the sink is the one thing I screwed up on ![]()

Customcaker: The number of sinks required can vary from county to county and certainly from state to state. It also depends on the kind of license you have. In Oregon, a home kitchen doesn't require 3 compartments, but a commercial kitchen does.
If you just have one sink, you can be prepared to show how you can put a tub in for rinse water, separate from wash water. Using a sanitizer is often a requirment.
However, if you are set up perfectly, they generally give you a chance to make it right.
Huge congrats!!!! I am thrilled for you! Now, I was under the impression that we, here in Maine, only needed a two-bay sink-is it three now? Or is a bathroom sink considered the "handwashing" one? I ask because I am going this weekend to pick out my new countertops and sink-I want to be sure to get the right one. Any other tips you could give would be appreciated. I think I am going to send out my stuff-water test and applications in April-my kitchen repairs should be done by then. You know, I am just full of questions-hope you don't mind if I PM you....

As far as the 3 bay sink - all we (Maine) is required to have is a two bay sink your bathroom is considered where you would wash your hands. If I have a separate kitchen for baking then I need a two bay sink for washing/sanatizing dishes and a small separate sink to wash my hands in.
Customcaker - I do have to say that the inspectors were great so I also am in agreement with JoAnnB if you have everything set up perfectly and this is the only thing that may be wrong they would probably work with you. Here they will give you up to 90 days to make any corrections and they will issue you a temp license in the mean time. Good luck and I hope all goes well!!
