Cake Show Cake?

This has probably been covered before, but I couldn't find it. I don't seem to be very good at doing searchs.

How far in advance am I safet to start my cake for the Mid Atlantic Cake Show March 10? I will probably be covering in BC (all shortening), and using fondant accents. I've never worked with a cake dummy before, so I really don't want to wait until the last minute. I know I can purchase a mold inhbitor, but do I really need that? Thanks for any help.

You can start any time. As long as you can protect if from dust and light, the shortening based icing will hold up just fine. You do not need a mold inhibitor, as long as your cake is a dummy, not real cake.

fasten your dummy to a working board, a bit larger than the cake, so you can move it an pick it up easily. I use 3 thin nails, or long tacks, with a bit of tape on the nail head so it won't scratch anything.

I got a couple pointers at the last cakeshow I attended. One of the hints was, elevate the board that the cake is on (easier to handle and move) you know like maybe hotgluing spacers or something to the bottom of the board. Another one was, make sure that you cover your board if necessary with coordinating color and don't forget to cover the edge of your board to coordinate also. If you are covering your board with fondant, don't cover the sides but use a ribbon in coordinating colors instead as those will be very supceptible to damage and handling. Just a couple of hints that the judges passed on to those of us who entered the show.

This really has nothing to do with the issue Price but I see you are from Maryland. I just saw that Colette Peters is going to be giving a class, did you sign up for it? I tried to but it was already full. They are going to have a lot of famous bakers and decorators there. I'm still thinking about going just to look at all the beautiful cakes. dolphins256 - The class was already full by the time I found out about it. This will be the 1st cake show I have ever attended. I'm really looking forward to seeing all of the cakes and the demonstrations.

I'm very new to the cake decorating thing so I think it would be fun to see but I would never dream of entering yet. It will take me a couple of years to get in some good practice.
