Can I Carve This.....and Color That????

I'll be making a basket cake for next weekend. I plan on using oval pans as that is the shape my customer wants. She wants the "basket" to curve in o the sides. I thought that I could make the cake this way.....

1. I would use my medium pan on the bottom and the smallest cake in the middles then another medium cake on the top. In my mind I thought this would make carving a little easier. What do you think?

2. I also add pudding and an extra egg in my mixes....will this be o.k. to carve. I want to make sure it doens't just fall apart. I know I'll have to use dowl rods to support it when I stack it. I just wonder if the cake its self will be the right texture to hold up to carving??

3. My last question......does IMBC take coloring well? Should I color my IMBC and let it sit over night to really let the color develope? I need to color it a shade of green so I can have some grass in my basket.

Thanks for the help. This will be my first cake that I carve so if you can add any extra "tips" for a newbie I would appreciate it.

I have always hand carved all of my cakes. I've never had a problem with any cake mix. I also had pudding and an egg. I just put them in the freezer for a little while just to get them really cold (I don't let them freeze) HTH. As for the IMBC I've yet to use it. Maybe someone else has an answer for you.

So it's easier to carve a cake that has been in the freezer for a while???

I'll give it a try. I've made a "test run" cake that I plan on carving this weekend.


I do have some left over IMBC from my last cake I did. I could let it come up to room temp. and re-beat it then add some color and experiment that way.
