I'm a full-time professor and bake for friends. My students asked me to do cake for 200 at their graduation. First, I must say my mind is boggled at the prospect. I've been reading the forums and searching for products online. I was wondering if any of you professionals have suggestions on RTU buttercream? Any advice would be appreciated.

ready to use....I really like the Rich's bettercream, but i haven't tried many of the others.

Perhaps you can test one at a grocery bakery?

I'm talking about the premade stuff that comes in buckets.

I'm afraid to order a gallon and find out it tastes awful or does not work well for decorating. The ads say it's great, but I'd prefer to hear from someone who's not paid to say that!

I think Sam's Club uses Rich's, which can also be purchased. Maybe you could ask them for a taste and see what you think.

Their Bettercreme (whipped icing) is Rich's but their Buttercreme is made by Dawn.

From my understanding most Sam's will sell you their icing in the buckets. The white comes in large buckets and the colors in smaller ones. You may want to check them out. I don't mind their icing for RTU. Or you may want to purchase both the Buttercreme and Bettercreme and mix them together 50/50. I like the flavor of this too.

Thanks for the info. I'm not sure if it's a compliment from my students or if they just wanted to get even with me for final exams icon_lol.gif

i used to buy from dawn...

the icing in 45 pound cubes tastes pretty good...

the icing in the buckets tastes like play dough.

its not that much more work to make your own....and it tastes so much better!

i have a recipe for a large quantity if you need it.

it's pretty simple, but it tastes good.

3 pounds crisco or whatever shortening you use

3 pounds butter, (or margarine)

10 pounds confectioners sugar

3 oz white vanilla

cream butter and crisco together with vanilla....add the sugar a bit at a time at slow speed...add water till its a consistancy you like.

this is a half recipe of what i use....it should be enough for a cake for 200 people....

it will be an ivory color due to the butter....but i've never had any complaints.

30 quart...lets see...that holds double this recipe...

so i guess you have to quarter it.

or maybe...

1 lb butter
1 lb crisco
3 1/3 lbs of sugar
1 oz white vanilla.

i was giving the recipe for a big amount, as she was looking to buy a bucket of icing...the buckets come in 18 pounds of icing.

I've used ready to use frostings.. generally they're too thick unless you doctor them somewhat. I usually add a little bit of heavy cream to them until they're the consistency I want, no complaints or anything yet!

I know that Walmart and the hospital I worked at used Brill. I'm not sure of how much the bucket held, but it looked like a standard bucket. The hospital I worked at ordered from Sysco. My mom is the food service director at a nursing home when I talk to her I'll ask her what she orders.
