I made a half batch of Antonia's Royal Icing today. And I am disappointed because there is no shine to it. I did everything the instructions said. And it doesn't have much flavor to it. I should have added more to it I guess.
any suggestions to make it shine? Should I have added some corn syrup or piping gel? Mixed it for longer than 10 minutes? Less than 10?
Not sure if this is the recipe for me.
Any ideas would be appreciated.
Thanks!
Tania

Antonia's RI does not have a shine to it...I think that Toba G.'s is the cookie icing that shines. As far as taste goes maybe add something other than the vanilla it calls for?

HTH's!

Icing sugar, water, cream of tartar and meringue powder. I got it from the recipe section.

I thought from seeing it in others' pictures that it had some shine to it. But guess not.
Oh well.... live and learn.
Going to re-do my piggies today for a lunar new year party tomorrow. I'll work with another recipe that I know tastes and looks good, it just takes longer to dry.

Thanks.

Tania -

I use antonia74 recipe but I alter it a bit to get the shine: Here is what I do - I only use a 2 lb. bag of powdered sugar (not 2.25 ib) and I substitute 1-2 TBS. of water with strained lemon juice for flavor and it cuts the sweetness. I also exchange the cream of tarter with cornstarch and add 1 TBS. corn syrup. That is what I used to do the mug cookies in my avatar. I waited 12 hours to package those cookies. I usually do not wait for any drying before decorating as I like my designs to be flush on top of the cookie. Good luck!

Thanks so much, etigg82!! I like doing cookies but they are very time consuming and back-breaking if you have a lot to do!

Thanks, Christeena....I have tried Antonia74's recipe also and although it's very nice to work with, the flavor wasn't my favorite, so I'll try your method!

I added some french vanilla flavored coffee creamer (powdered) to this recipe and thought it really helped the flavor. It did seem to take a little longer to dry.

I replaced some of the water in Antonia's RI with almond flavoring and everyone loved it...still very new to this, but will try Christeena's recipe soon...Antonia's seems to me to be a great choice for beginners.

Sorry gals, when I came up with the recipe I used the only bulk meringue powder my supplier offered and it has vanilla powder as an ingredient built right in.

After posting it on CC, I've since learned that not all meringue powders are the same and most are unflavoured.

You can certainly adjust the recipe to add a bit of vanilla etc. Do be careful adding any oil extracts, as oil doesn't allow it to whip up or dry quite the same way. thumbs_up.gif
