Does anyone have recipe they like using ground chicken?

I bought many chicken breasts the other night and need to do something a little different tonight so I thought about doing ground chicken.

Ideas? Please?

You can use it in place of ground beef in almost any recipe, like meatloaf or meatballs.

If you haven't already ground it, have you tried Oven 'fried' tenders?
cut the breast into strips, dip them in Ranch dressing (even fat free works) then press them into crushed cornflakes. Bake them at about 350 for about 18 to 25 minutes (you have to keep an eye on them)

They are really good.

You could do chicken tacos, the same with ground beef only chicken. It's just as good and a LOT leaner.

Thank you for the ideas. We just had chicken strips last night. And on Sun I did a mexi chicken recipe where you take chicken breasts and coat them with yogurt mixed with taco seasonings. The chicken tacos crossed my mind, but I want a different taste.

I might just have to throw things together in a bowl and see how it turns out. It is just me and my nephew and he will eat pretty much anything I cook with a few exceptions.

Its just one of those days that what ever I think doesn't sound quiet like what I want, but I can't figure out what I want. Plus I've been up since 6 this morning (went to sleep too late last night) and have had a 5 week year old since 6:30 and will have her until 5:30ish so I want to do something pretty easy and that doesn't require a trip to the store.

How do you mothers with small kids get anything done? Of course I think she is just a little doll when sleeping so I end up holding her instead of putting her down and doing things like washing dishes or folding clothes.

Thanks for the ideas! I will keep them in mind next time I have chicken, which after tomorrow won't be for a while! 4 days in a row is enough. I'm having beef on Thrusday. icon_smile.gif
