Is there a color difference in fondant pieces that you leave out to dry versus the fondant you stick right on the cake? Thanks.

As fondant dries there will be a slight colour change, but this will also happen to the covered in fondant cake. However, light, be it room lighting or sunlight, will permanently change the colour so you want to keep it out of light. This is particularly the case with pink, red, black and purple when exposed to light for a long period of time. Also some fondants have yellow oxide in them and this will affect the colours you will get.
