i have read alot on here that homemade black icing has a bitter taste. can any one recommend any store bought black icing that tastes good? i am trying to make a dale earnhardt cake for a friend.

I've only used it when it came with a kit, but the Wilton Black Icing in the tube wasn't too bad.

I haven't noticed the black tasting bitter. It does take a lot of color though. I've done both, bought the Wilton black and made my own. Definitely easier to buy it if it fits in your budget and you don't need much.

I make my own, it does take a lot of colour but i've never had a problem with the taste

I've made black buttercream icing a lot of times and it does not taste bitter. You do have to turn it brown first and I use cocoa powder for that. It just tastes chocolately to me! The recipe I use is 1/2 crisco, 1/2 butter.

I also make my own, but I start with chocolate buttercream, then add the black. You will still need a lot of color but not as much.

Thanks for posting this topic. I just made a Nascar cake this past Friday an was very limited in my use of black icing, simply because it had a bitter taste. I tried to add extract and it helped slightly, but I made mine from white BC and it indeed took a lot of color and had a slight bitterness. Next time I will try to make chocolate BC and then add black icing. I noticed Wilton makes a "No taste Red", but I never saw a "No Taste Black".

If you start with a chocolate buttercream and add black then it doesn't really affect the taste. Also using Americolor helps a lot. Try to make the icing ahead of time and stop adding color when you get to a dark grey, by the next day it should be black, as the colors deepen as they set.

Does the Americolor impart any bitter taste to icing when taking it from white to a nice deep red? Wilton should be sued to remove the "No Taste" claim from their red color! LOL

I've tried making my icing a deep yellow or a deep orange and then taking it to red, but it doesn't really reduce the amount of red color that needs to be used. I try to avoid using red for anything more than just highlights.

Does starting with chocolate icing work with making red too? I have a elmo cake to do for my nephew's birthday next saturday and am thinking I need to buy another container of red.

I've never gone from a chocolate to a red. It works in red velvet cake???!! It seems like your red might not be a bright red though.
I've never had any problems with Americolors being bitter though or changing the taste at all. I remember reading though that if they did you could add a slight bit more of extract to overcome that. I've used almost an entire little bottle of Americolor before and not had problems.

..no, sorry that won't work for red! If you are trying to make red BC and are getting a nasty taste just add a bit of powdered cinnamon!! thumbs_up.gif It takes away the nasty taste!!

thanks for the tips. i bought green decorators icing last night & not only did it taste awful, i couldn't get it to squeeze out, even after kneading it. i bought the bag kind instead of the can, because i wasn't sure i would be able to control the pressure with the can. i will definetely try to make my own black, there's no way it can taste worse than the storebought.
