Mmf Question -- Sticky

Haven't made MMF in a long time, and I don't remember about this.

Even though it works really well, it still has a touch of stickiness to it if I leave my hand rest on it. I don't want to add more ps because it seems like a good consistency, but I'm hesitent to add more crisco (I already added 1/4 cup in the mixing process.)

I haven't yet let it rest overnight, so will this issue go away tomorrow?

This is one of the reasons I like the pre-made, it doesn't seem to have this issue. But, I don't have the time to get Satin Ice, and it's really expensive anyway.

I would let it sit and cure for a bit so that the ps has time to absorb the water n all. If it's still sticky when you take it out of the bag then just dust your surface that you are kneading it on with more ps. That should help. Personally, I like mine a little sticky, less tendency to crack and dry out.

I think it will be better tomorrow after it has set. If it doesn't you may have to add more ps just to work with it and not have it stick.

I just made a batch this morning and wondered about the same thing. I just wrapped it in saran wrap and let it sit for about an hour or so and when I went to roll it out it was fine. didn't have any problems. I also put a little crisco on the rolling mat though

WOW. You wrote that you put in a 1/4 cup of crisco already? WOW, I think I make it wrong. I only use marshmellows, PS and a little water/milk and flavoring. I coat the bowl with crisco (and the dough hook)...but I have never used extra crisco. I then let it sit overnight before trying to use. It has seemed fine (I do crisco my rolling pin, mat and hands if necessary)

What's your recipe?

I tried the "alternative" MMF recipe here on CC. It says to add 1/3 of a cup of crisco during the mixing process and this basically eliminates the need to use to later. I only added about 1/4 cup, and truthfully, I hardly needed to use any crisco later.

The recipe also got 4 stars whereas the regular recipe only got 3.

Good to know! Thanks for sharing since I always use the regular recipe and use Crisco in hands, rolling pin and mat. It worked fine though! but sometime I hate putting crisco in my hands icon_rolleyes.gif

Hi I used the alternate recipe last week and it came out great. I made a batch of white choc candy clay and mixed the two together. GREAT results! Tasted wonderful and the consistency was perfect.

Thanks, since I got the original, I never have even looked for an alternate, I didn't know that one existed. Thanks for the info! I'll try it that way. And with the choco clay! Yum!

I have been terrified to try it, because I think I'll blow out my motor!

we use our KA to do MMF kneading all the time, works great and the motor isn't strained at all

Great to know! Everytime I make MMF I curse it while I'm working with it (and looking longingly at my KA and doughhook laughing at me)!! I finally forget how much I hate to make it, and then I do it again!

Next time I'm definitely trying out my appliance, that's what it's there for, right?

I always us the KA -- I have the Artisan, too -- the smaller one. You just have to remember to keep it on speed 2 from beginning to end. If you go off of that, you will burn out the motor -- been there done that! Called the company and got the speed info I needed. It only takes me 5 minutes to make a batch -- love it!

I used the alternative recipe but added an extra TBS of H20 -- it came out really stretchy but still a little too sticky for my taste. Will try it again with only 2 TBS + 1 tsp of water. I always seem to need more water anyway, so I'm just trying to eliminate a step.
