I've just finished a cake using the white chocolate rolled fondant ordered from Caljava. I found it very difficult to work with. Still looking for fondants that will be nice tasting. Have tried SatinIce, Pettinice and now this one. Haven't yet tackle MMF.....
Do you recommend crisco or powdered sugar when kneading? I used both and had cracking when using the clay gun and making drapes. Found it very, very soft for bow shaping.
Any help would be greatly appreciated!! ![]()
I use gumpaste for bows, I find fondant to be too soft. You could add some Tylose powder or Gumtex to make it dry firmer but I always have a batch of gumpaste made up.
Have you tried Chocopan fondant? It's been years since I've used it, but as I recall it was quite soft, didn't have rolling problems and the taste was very nice. I use Crisco when kneading to soften the fondant if it feels very firm, but if it is already too soft I would use powdered sugar, but not cornstarch.
I use Chocopan fondant and don't have any rolling problems. It is softer than regular fondant and you have to work a little faster, and I agree that it's not really meant to be used to make bows n' such, unless you add things to it to stabilize it. I would use gumpaste for bows.
Hi, I just last week made some MMF (the alternative recipe) and some white chocolate candy clay and kneaded them together. It was delicious and very easy to work with. A little soft for bows, but great for covering the cake. I've never used Satin Ice or Chocopan, but can't wait to try this method with some semisweet chocolate.
