Choc Mayo Cake?

Has anyone tried making a chocoate cake using the following recipe?

1 boxed choc. cake mix
1 cup water
1cup mayo
3 eggs

Mix together. Bake at 350 for 35-40 for 8in layer cake.

Does it turn out good? Looking to try something different for chocolate cakes. Or any other recipe or boxed choc cakes you found that you like?

I have three different chocolate mayonnaise cake recipes, but none start with a boxed mix--they are all from scratch. What is interesting is that usually the mayo is said to substitute for the eggs and fat, but your recipe still has 3 eggs in it.

I've heard variously that the recipe was devised during the war when eggs and butter and shortening were rationed or hard to come by, and that the recipe was devised by the wife of a Hellman's Mayonnaise salesman.

I've made each of my three recipes at one time or another, but none are my favorites, though one of my friends uses hers constantly and always gets raves.

my great-aunt Irene's recipe (the only we use in the family)

2 cup flour
1 1/2 cup sugar
3 tsp. baking cocoa
2 tsp. baking soda
pinch salt
1 cup mayo (tho' we usually use Miracle Whip-like the extra spice taste)
1 tsp. vanilla
1 cup warm water

Sift dry ingredients together.
Mix wet ingredients together.
Add wet to dry.
Mix well.
Bake 350 for apprx. 40 min. (until passes toothpick test)

I have used that recipe and it turned out very well. People really liked it. It is still sweet but has a little tang to it. It also comes out very moist.
I also added a pinch of cinnamon to the recipe.

Another good chocolate cake recipe is the one on the back of the Hershey's cocoa powder can.

crp7...I agree..the one on the Hersheys Cocoa container really "takes the cake" in my book!

That is what I always doctor my chocolate cake with. I try to get the Chocolate Fudge cake and also add extra vanilla extract to it. You can't even tell that it has mayo in it, just extra moist! I love it!

I tried the boxed recipe for a cake I did for a coworkers baby shower and put the costco filling recipe (strawberry) posted on another forum. Everyone seemed to like it. And recipe was easy to do!

you know, that's the chocolate recipe I use except I add a splash of vanilla and use cool coffee instead of water--adults especially really like the flavor.
