I covered my cheesecake in Toba Garrett's Cream Cheese Buttercream recipe and froze it overnight last night. I than covered it in chocolate plastique this AM. Now it is weeping clear water. What do I do?

I'm curious, did the instructions tell you to freeze the cake? Anything that freezes and thaws is going to have condensation form on it, which is what your cake is doing. It should evaporate on its own once the temperature stabilizes.
