Michelle Bommarito, She was using a blow torch thing to warm her buttercream while it was still in the mixer, she said it made it easier to spread. Has anyone tired this?

No but isn't it similar to dipping a knife into hot water and wiping it off to smooth a cake? The effect I mean. The hot knife makes the b/c easier to smooth and spread and the warm b/c would be "looser" to ice with tthen too.

Sounds like the same idea. I am new to all of this so I find any of it interesting. I will have to try the hot knife next time

If I had to guess, she was probably making an IMBC or SMBC and she was getting it to the right consistency to put on the cake. Those can separate or be too rigid (if cold) to spread nicely.

If you use a decorator's buttercream (crisco and/or butter with PS), I think it would be a lot easier just to put it in microwave safe dish and nuke it--I don't use fire unless absolutely the only way to do something.

I didn't see this episode, BUT, I did see an episode of FoddTV Challenge ( I THINK it was the Elvis b-day cake) and Duff used this method and the judges weren't happy at all because they said a blow torch is NOT food safe! LOLL REALLY?

I know exactly what episode you're talking about and I never heard them say that the blow torch was not food safe...chefs the world around use a blow torch to caramelize sugar on top of Creme Brulée, for one example of its use in food. I could have missed one of them saying that, but it would blow my mind because butane torches are routinely used in kitchens everywhere.

What they were fussing about was they thought it was just a showy stunt on Duff's part to use the torch to heat his icing. icon_smile.gif

The chef that said it was the one that is MC of most all of the FoodTV Challenges. It was right after Duff had done a demo on French Buttercream Icing. (I remember because I did that recipe the next week); they were concerned that he was using the torch "inside" the icing bowl (to the best of my recollection) and it wasn't the small butane torch that chefs use.....it was like a WELDING torch. I really don't know if that would make a diff.

Hey, Duff IS showy...but so are his cakes!! That's what makes him an ACE...Right?

Oh yeah...the emcee's name is Keirgan or something weird like that, right? I guess my eyes deceived me, because I could have sworn Duff was using the standard blue Bernzomatic torch (like this one that we all have in the garage (not one of those little hand-sized kitchen torches that are way overpriced and underfueled, like this one). Did Duff actually have an acetylene welding torch in his kitchen on one of those shows?? If so, I definitely missed that!! LOL

I must be thinking of an altogether different episode, though, because I don't recall a demo on French buttercream.

Oh well, I was wrong on the fuel anyway...it's propane, not butane (although I do have a little butane pencil-size torch too).

I don't think it was an acetylene torch....but with Duff...you never know! LOLL I just know that they were "concerned" that he put the torch inside the mixing bowl.

I wish I could remember EXACTLY the episode. Oh well....he didn't win....of course. BUT, the French Buttercream recipe was a hit on the next cake I did!

I remember the episode and it was that he put it in the bowl. I actually did this today on the side of my bowl to warm my SMBC.

KEEGAN is the MC and he is super nice!
