I wasn't so impressed with what the pastry chef used transfer sheets for in this episode, but I've seen them used on other episodes and they looked pretty neat in that application.

Tonight, a PC at Brasserie 8 1/2 spread chocolate thinly and cut tool shapes out of it. Then he placed the tools on a "manly" groom's cake. He used woodgrain transfer sheets to make strips of chocolate look like planks of lumber.

At first I was really excited about the show, I still am but not as much. I wish they would go into more detail sometimes about some of the cakes or techniques they show.
