This probably sounds a dim question I am fairly new to cake decorating and have yet only tried BC, MMF. I want to use an incing that is fairly heavy and I can make shapes out of it and mold, but I hate fondant I have tried several brands and made my own and they are all horrid as far as I am concerned. I don't want ot upset anyone who likes it that is your choice.
My question how do I decide what icing to use. I quite like MMF but can you make say a lemon or orange flavor and is htere a colorant that be used to say make apricot icing.

Hi, and welcome to cc. As far as I know you can use any extract and or flavoring you want. Try some and find a taste you like. I tried almond extract in mine I loved it. As for color just add a little at a time till you get the color you want. I have done it, and it worked well for me. hth
Welcome to CC Leonora! I prefer MMF too. As Sassijen said, you can use any flavoring you would like(I have used vanilla and butter extract so far). I have made quite a few figurines from it and loved using it for that. Also, like Sassijen said, it will color just fine. Start with just a little coloring and knead it in. Just remember that the color will actually darken after a bit, some will leave it overnight before adding more to make sure they get the right color. I personally use the wilton gel colors for my MMF, but Americolor is way better from what I have read on here. The only reason I have wilton, is because it was what was available at the cake shop in town=) HTH, Jen
Thanks says me grinning and going off to flavor and color NNF iti is still difficult for me to decide what cake to use even sometimes it is obvious ie weight wise but what type of icing as well. I have not got enough experience and I am trying to teach myself which is not easy. Glad I came across this place it looks as though it is going to be my lifeline
