FYI: The San Diego store, "Do It With Icing," is starting classes for the Lambeth method on March 3. It's hard to find anyone who teaches this; I'm looking forward to it. Their info is at DoItWithIcing.com

NEW!!! INTRO TO LAMBETH STYLE CAKE DECORATING WORKSHOP WITH TAMI UTLEY
Lambeth is the English technique of over piping to create stunning effects and curving scrolls and borders with dainty line work. In this hands-on class we will start with the basics of Lambeth style decorating. This class will identify the Lambeth techniques and complete a center motif with a scroll border. Since Lambeth cannot be learned in a day, there will be several other classes in this series (over the next several months) to progress into the more ornate cakes that include bevel and side work, cushions, lemon peel, lattice, and rings. Bring a 12 round cake board covered with fondant or royal (smooth and dried). Parchment paper, firm (not stiff) royal icing, parchment bags, tips 16, 14, 5,4,3,2,1, pencil, spatula, and a small paint brush.

There were 6 total signed up today (Saturday). I know the instructor has a min. amount of people or the class gets cancelled. Don't know what the min is. I believe the max is 15 though (she likes to keep it small so she can see everyone's work and help if needed). I don't think the class is until March though so there's still time. I'm hoping to go too.
There is a sample in the store of the plaque they are doing in the first intro class. Looks like a center motif and a crescent border.
I do, I took a cookie bouquet class and a holiday fondant figure class there! I love Amy's style of teaching!
The School is in La Mesa. I am thinking of taking their beginning up to advanced classes. They have a lot of classes varying from chocolate to airbrush. It seems like it's a really good school because some of their teachers have studied under the greats and one has been the ICES president.
Their prices are also reasonable. They provide all the icing and everything.

I'm not sure. I think she does the classes at her house. But she trained under the greats and even taught at really good culinary schools. One of the instructors also studied under N. Lodge privately.
I think I'm going to wait until her beginner classes start again so I can start from scratch.
Who else is entering the cake show?
Amy doesn't sell cake supplies. But I believe everything is supplied for most of her classes. I'm not sure who was an ICES president that teaches at her school. Hmmm.
I do know that some of the instructors at Do It With Icing have also studied directly under Nick, one was even his assistant for 2 years in his mini-classes. Also assisted Colette Peters in her mini-classes. Plus studied under numerous teachers from England and 1 from South Africa and demo'ed at the Culinary school in SD. So if you're looking for gumpaste, either place for classes should be fine.
I do like Amy's classes though. She is a very patient teacher and her training in NY definitely shows. Her school has been around for awhile so all her classes are pretty tried and true(does anyone say that anymore?). She also has guest instructors who are very good. The nice thing is that we have 2 places in SD to go to classes. So we get quite an opportunity to take some classes here without having to travel too far.
The only other place I know that has a full Lambeth course is Wilton in Chicago. Licia, maybe you could ask your ICES rep or your local cake shop if they know of anyone teaching?
