Does anyone else feel one day that you are the best cake decorator and that you can decorate anything!!!!! Then you bake one bad cake and you automatically think that you can never decorate a cake again? I hate these HIGHS and LOWS!!!!! One good cake and Im a genious, one bad cake or slip up and i feel like I should give up!!!! icon_cry.gificon_cry.gificon_razz.gif

TOday at work the first thing I did was frost a 1/2 sheet cake in cream cheese frosting. I did such a horrible job that I wanted to quit cuz I felt like I couldn't do it. Than I did 500 cupcakes in an hour and than I decorated 10 cakes and realized that I'm fine, I just have lots to learn and if I didn't have lots to learn than I'd feel like I'd lost something, cuz learning cake decorating is great!

I understand just what you mean. I'm always my worst critic though. My motto is I don't promise perfection, but I promise good taste!!

I did my cousin's wedding cake. It was the most nerve racking cake I've ever done!! When I finished I was really disappointed with myself because the frosting smooth enough and my "pearl" border was not the same size all the way around. But when I got it all set up and stepped back it really was nice. I got more compliments on that cake. The most important thing was that my cousin and his wife loved the cake.

When I did the 3 tiered cake two weeks ago, I was a nervous wreck. I was calling every friend I had to come over and see if it looked okay. It was my first big project. It just all went too smooth so I knew something had to be wrong with it! I got so many compliments at the anniversary party! I was beaming.

Next week I had to do Spiderman.........I thought it was the worst cake I have ever done and the little boy was thrilled with it. I hope so because it was my last one of Spiderman.

Guess everyone has highs and lows. Helps if you have someone around to pat you on the back once in a while! That's what we here at CC are for, I guess. thumbs_up.gif

However, I only take pictures of the ones I am happy with (although I know I am my own worst critic) so when i look at my portfolio it perks me up icon_smile.gif

It makes me feel better to know that I am not the only one. I definitely empathize with how you're feeling. Some days I feel like I'm getting pretty good, then others I wonder why I do this at all. icon_cry.gificon_confused.gif CC always keeps me going though!! icon_biggrin.gif

Oh, I agree whole-heartedly with you. And I've realized that it's sheet cakes that make me feel useless!! icon_smile.gif I spent ALL day frosting a 9X13 double layer sheet cake the other day and was miserable the entire time. I felt like the biggest poser ever. I wasn't a cake decorator-I was a mess.

This happens every time I do a sheet cake. It's a curse, I know it.

You're not alone. Just remember your great days. Your cakes are wonderful.

Oh me toooo!!!!!! I hate doing sheet cakes, I always feel like they look stinky and I get frustrated. For me it is hard to do something unique enough that it doesn't look similar to a bakery and it is just such a large canvas....... basically I have a no sheetcake policy! I don't enjoy them, they make me feel bad about myself, the ingredients alone are more than a Costco cake.... So Costco is my unofficial partner! I refer all sheetcakes to them icon_smile.gif

I personally like doing layer cakes better than sheet cakes but have discovered sheet cakes are easier for me now that I have discovered the "Melvira Method" of smoothing the icing. My daughter, however, had an order for her first sheetcake, and told me she would rather do sheetcakes anytime. She thinks they are much simpler. Guess to each his own.

Yup ...we all have our days..I am working on a cake as we speak and I put it all together yesterday and started putting the daiseis on and it began to bulge icon_evil.gificon_evil.gif So I sat there for a minute and I had these flashes going through my head that I should call the customer and just say the cake won't be happening icon_cry.gif ...but then I decided okay..I have alot of time before it is due and it is fixable so I tore all the fondant daises off and re-iced it and stuck it in the garage since it is cold here and let it set up.It is fine this morning but I had to make all new fondant daisies icon_mad.gificon_mad.gif and now I am set to finish it.lesson learned...Let a tiered cake settle over night before you add the final touches!!!
