I had to work last night Feb 13. I had an order for 2 dozen strawberries for Feb 13. I did them really late Feb 12. Put them in the refridg. for my DH to take them into the guy the next morning. The guy calls and says he is going to go ahead and work on Feb 14. Please bring them to work on that day instead. So-----they have been in the refridg. My DH takes them to work with him with a note saying if you are giving them to your wife today do not put back in the refridg. at work. They start to sweat so the guy puts them back in the fridg. and calls my husband and asks what I did to his strawberries.

Question--will these strawberries still be good for tonight? If they are not,
I just want my Dh to bring them home because I don't want this guy saying I gave him a bad product. What do you all think? When my DH called me, my first thought was you guys. Any answers fast would be appreciated!!!!!

They started to sweat because they were out of the fridge coming to room temp. I try to dip my strawberries the day they are to be eaten but they are fine. I watched on food Network that a company that dips them, packages them and then mails them out so the customer gets the product within 48 hours. Unless the guy is upset and doesn't want them, I would say tell him about the room temp and all will be fine.

I only do "same-day" chocolate covered strawberries.

That's what I thought, but I needed someone else to say it. When I did them, they were supposed to go to her within that same 24hours. Then something came up and they couldn't keep their "date" for the 13th. So everything got changed over the the 14th. I am sick to my stomache. I have never, never had any complaints. I am ready to puke!!!!!!!

Thanks for being there you guys.

Once they are dipped, they should never go back in the fridge. This will ensure that they do not sweat.

If possible do not refrigerate them after they are dipped.

I try not to dip them to far in advance.

Day before or same day and leave them out in a cooler place.

If he stops taking them in and out of the frig and open the box they will dry and will be fine.
