QUICK QUESTION... I HAVE BAKED AND FROZEN A FOUR TIER CAKE(12", 10" 8" & 6") IS IT OK TO TORTE THEM AND PUT A CRUMB CRUST ICING ON THEM & RETURN TO FREEZER SINCE iM NOT GOING TO FINISH THEM UNTIL WEDNESDAY THUR & FRIDAY?..DO I LEAVE THEM OUT TO DEFROST OVERNIGHT THEN FROST. I DO NOT PLAN ON PUTTING THEM IN REFRIGERATOR AFTER EACH LAYER IS DECORATED. HELP! MUST BE READY FOR FRIDAY NIGHT PARTY.

Hey,

I normally torte, crumb coat & then freeze but I guess it wouldn't hurt to freeze, torte & crumb coat, then put back in freezer. I don't see that you couldn't do it that way this time since it's already frozen. Maybe someone else will have better advice. I really don't see why you couldn't do it that way. Hope I could help a little~

When you go to thaw the cakes out. Lay them out keeping them in the tinfoil or saran wrap that you wrapped them in. Let them thaw overnight covered. Then when you are ready to decorate uncover them.

when you torte them and fill them i suggest you let them "settle" for at least 6-8 hours...it helps with bulging..you don't want that...but then after i let them settle i wouldn't freeze them and defrost again...hmm

maybe you could freeze the cakes whole...remove them tuesday morning and tuesday night torte and fill all of them. THEN, wednesday you can start crumb coating and decorating and thursday you can continue, cuz it will take a while (especially if you're only working on it after work) and then friday night, finishing touches and your're ready to go thumbs_up.gif

well.....I have already torted and crumb coated all but the largest layers.
I put them back in the freezer. Did I do wrong??
Gosh I hope not!!!

i dont think you went wrong...just remember that when they defrost, they're going to need to settle so that the sides dont bulge...leave them out all day to thaw and settle thuroughly...you should be ok icon_wink.gif
