I have a bride who wants an Italian Cream cake with no nuts or coconut. Anyone have a tried and true recipe so I don't have to experiment? I'd prefer a doctored cake mix recipe.

I thought all Italian Cream cakes had coconut and nut. I will be interested to see the variation. I will look in my books!

Thanks...I'm looking to get away with using extracts and perhaps coconut milk instead of nuts and shredded coconut.

This is a strange situation....she also wants a cheesecake-flavored cake. Ugh. Cheesecake is cheesecake, and cake is cake. I'm going to try to incorporate a cheesecake-flavored pudding mix into white cake mix and see what that produces. They do make cheesecake-flavored instant pudding, right?

Yes they do make cheesecake flavored pudding. Lorann oils also has a cheesecake flavored oil. I wonder if you could add in some cream cheese into the mix??

Y doesn't she want coconut? My husband hates coconut so I put it in the food processor before I add it to the cake and it gets chopped up so fine he is clueless to it....he eats it up....poor clueless man! LOL!!

I'm looking for you!

I think it would work if you doctor your mix with the cheesecake pudding and if you have it add in a drop or 2 of the cheesecake flavored oil. Then could you use a cream cheese filling to give it a bit more of a cheesecake taste.....I think that sounds yummy to me...can I have some? icon_smile.gif

Also you could use a cream cheese frosting on the cheesecake cake....

Me again.....Does a Butter Pecan cake mix have pecan pieces in it or would that work? you could doctor it with a vanilla pudding (I would suggest the coconut creme pudding, but it has coconut pieces in it) and add in coconut extract.
