Baking, Frosting, Decorating... Too Early???

My sisters shower is on Saturday at 12. I have so much to do and no time left. Yesterday I started baking the cakes because I need 6. 3 tier, 2 layers each. I have one cake left to bake today. I also get out of work today at 12:15. Tomorrow I don't get out till late and I have to head over to the hall to decorate that for saturday morning. So here are my questions...
Would it be okay to fill cake with vanilla instant pudding, frost with layer of buttercream, and cover in MMF today?? I would usually have baked the cakes today(thursday) and decorated friday but there is too much to do and I don't want to be stressing that it won't be finished last minute. Please help!! Let me know what anyone has done.
i would think the fondant would dry out too, but it would keep the cake moist inside..but who wants dry cracked fondant right? i have the same dilema: my sister in laws shower is Sunday and she's in FL. So I will have to take my equipment and decorate it on Sunday ![]()

I kept it for 2 days covered at Christmastime. It looked and tasted fine. I am not sure if it was because it was MMF or not. Anyway it was fine for me.
Jill - since the shower is on Saturday, you can most definitely do the cakes tonight. The fondant will be firm, but if you put the cakes in a box, it will be fine. I am not sure what type of fondant you are using, but if you are using Satin Ice, you can actually put the cakes in the fridge and they will be great. As an example, we were celebrating my SIL's b-day on Sunday - Christmas Eve and since i had allot of baking to do, i finished the cake, which was covered in Satin Ice fondant on Friday night and put it in the fridge (it is the Coach bag cake) and on Sunday evening when we went to cut the cake, it was great - we had taken the cake out of the fridge and placed it out to get to room temperature and the fondant was firm, but not hard and the cake was very moist. I don't make cakes that often - but when I do I usually start a few days early. I get too excited to wait! My cakes are always fine, in fact better than when I rush decorating right before a deadline. My MMF is always fine covering my cake in the fridge overnight. Except when I pain it - I can't cover it so the paint doesn't dry all the way - honestly.
