This is my interpretation of Elisa Strauss' hat from Confetti Cakes Cookbook. I made this for my son who always wears a white Miami hat. The hat sat in the middle of the Miami "U" and was Darn Good Chocolate Cake with Oreo Cookie Buttercream filling and covered in rolled buttercream. The bill was made of gumpaste.
