Can you cover a cold cake with fondant? Does anyone successfully cover a cake straight from the fridge with fondant all the time? I have read a few places that some people go ahead and cover cakes with fondant straight out of the fridge and I was wondering if anyone has any tips/advice on doing this.

I do it each and every time and have never had a blowout or any other such problem. I keep my cakes cold through the entire process from torting to finishing. No real tips or techniques... I don't do anything special or different--they're just cold!
its not really advisable, because due to the cake coming up to temperature, you could end up with big air bubbles under your fondant. a lot seems to depend on your areas weather and humidity, and how good your fridge is.

I don't because the condensation when bringing up to room temp. It's too hard to work with, too tacky and sticky. I bring cakes to room temp before covering.
It is not advisable to cover cold cakes cos of condensation. I've had bad experiences with the condensation making my cake sticky and messy and I would rather let my cake come to room temperature before covering with fondant.
Many decorators, including Toba Garrett, do recommend covering a cold cake.
I always cover my cakes right out of the fridge. Doesn't cause me blowouts or even minor bubbles. I never get condensation or stickiness either.
I also put mine back in the fridge after the fondant is on them **GASP** THE HORROR! lol
Thanks guys- I went ahead and covered it right out of the fridge and I had no problems.....I too stuck it back in the fridge overnight b/c someone is picking it up and traveling a few hours with it and I wanted to make sure it was stable....so far so good! We'll see if it makes it there in one piece!
I cover cold cake all the time. I do not however put them back in the fridge after they are covered.
