I make shortbread every christmas as it is a tradition in my family but they are quite crumbly and as far as I know you cannot use a cookie cutter on them. They are made with only butter no shortning. If you want really good christmas cookies I would go with the nfsc the shorbread are better in a shorbread mold or cut into wedges or squares.
I'd recommend the NFSC... shortbread is good, but i have found it to be really crumbly and it doesn't stand up as well as NFSC. If you have a good recipe, you could use either.
NFSC has more ingredients than shortbread... Shortbread is butter, flour and sugar. NFSC has more ingredients and more flavor. I find NFSC more versatile.
You could always bake a batch of each and see which you like better, too
then you get to eat the leftovers!!

I exclusively use shortbread for my cutout cookies and have never had a problem with rolling, cutting or crumbling. I prefer it to sugar cookies because to me, it seems to retain its freshness a little longer and it doesn't spread the way that sugar cookies can. I can get 3 weeks out of a baked, wrapped shortbread cookie held at room temp.
