I am making a wedding cake for tomorrow. The bride wants chocolate buttercream in a dark choc. brown color. Her colors are choc brown and pink. I made the chocolate BC dream recipe and have added a ton of brown and some black color, but I can't achieve the color I want. Now I have like 15 cups of choc BC Dream, but not in the right color! HELP!!!!
I think it might turn darker overnight. I've seen a dark cocoa - I think it was by Hershey? Perhaps you can add some of that?
Thank you beachcakes for your response...
Anyone else have any other ideas, maybe even a good recipe to get it that dark? Thanks guys!
I had the same problem ,and nice people on CC advised to let it stand over night .And It was darkere after few hours. Try that and I also added melted dark chocolate to it .Good luck
Dutch Process cocoa (in any chocolate BC recipe) will make a darker chocolate icing. The only other suggestion I have won't do you much good right now, unless you have a good cake supply store near you, since you're on a tight timeline. I have found that the Americolor colorings really work well, especially the Super Black.
I definitely agree with the suggestion to let the icing sit for at least several hours to darken.
Let me know if you find one , I've been trying different chocolate ones and have yet to find a keeper. Good luck to you. I also want the darkest brown color and do not have any luck getting it.
oh man...I am thinking maybe adding some choc ganache to it? I have been using the americolor brown and ran out...now I am onto the Wilton stuff!
i just made some choc bc last week using cocoa powder and it turned into a deep, dark brown. it tasted marvelous! i subed about 1/4 cup in the reg. recipe. hths!

beachcakes is right. Hersheys just came out with a new product. " Hershey's Cocoa Special Dark". I just used it to make my chocolate buttercream and boy did it turn dark. Also, you don't need to add as much of it as you would your regular Hershey's Cocoa.
I agree with zubia, but I've never tried the new Hershey's. This is the recipe I use... http://www.cakecentral.com/cake_recipe-1941-6-My-Easy-Chocolate-Buttercream-Frosting.html... and it gets darkest if you use chocolate squares rather than regular cocoa.
OK-I just added some choc ganache to it...definitly looks better, but not dark enough. I am off to the store to buy some of that hershey's dark cocoa! Looks like I am pulling an all nighter!!!
I hope this works!
you can add hershey's powdered chocolate, or try using some dove dark chocolate syrup.
Just tried the Hershey's Special Dark cocoa yesterday and it was just PERFECT........ I have been looking for a dark chocolate icing for years and FINALLY got it !
granma_j I have to go get me some, now because it's dark chocolate does it have the dark chocolate bitter taste ? Or does it taste like the milk chocolate? Thanks
Try Toba Garrett's Chocolate Buttercream icing, www.epicurious.com, it is to die for and it is pretty dark. It has chocolate ganache and dutch processed cocoa in it, definitely worth the effort, the taste is phenomenal.

I just found some Hershey's Special Dark Chocolate Cocoa at Walmart the other day, you might try there if you have one close. Otherwise there are several places on line to order.
Duncan Hines makes an icing "Dark Chocolate" in the can. It's really really dark. I used it for the bottom cake of my PIG cake in my gallery. It is almost black. Which is what I was going for.
