Help...again Diabetic Cake?

I need help again....i am going to try to make a diabetic cake for a teacher at my daughter's school. i've never made one before and don't know if there is any particular things i should do differently than a regular scratch cake, or is it the same...also, i looked in the recipe index and found a recipe for diabetic icing, but didn't find one that was rated for a cake mix...anyone have anything that would be good. i would really appreciate it. thanks in advance,

I used this icing to decorate a cake for my father in law who is diabetic and it was wonderful. Also Splenda is a great product to use for baking a cake. Just replace the sugar with Splenda and add a little extra bbaking powder I think? You can get info on what to add on Splendas website.

I even did a frozen transfer with this icing. Here is a pic of the cake

btw the icing does not crust over like the crusting buttercream, so it is a little harder to get smooth, but other than that it worked great. I wasn't terribly happy with my fbt helmet, the wax paper got a little wrinkled and it wasn't as easy to smooth out the imperfections as it is with the crusting buttercream.

I just made a diabetic cake for my SIL. I used sugar free chocolate cake mix that I found in my grocer's health food section and the diabetic icing recipe posted above. For the icing I used a box of sugar free chocolate pudding to make chocolate-cream cheese frosting. It was delicious! Here's what the cake mix I used looks like. It took two boxes to make a 2 layer, 8" round cake.

i've looked for the diabetic cake mixes...so far i haven't found any. i think my next trip is going to be to the health food store, maybe they will have some there, although it will probably be a little more pricey. thanks all for the great suggestions. icon_biggrin.gif

Here they were about $2.49 a box but a box is only 5 servings so you'd need at least 2 to make a decent size cake. All you add is water though...no eggs or oil. I baked 2 boxes in an 8x3" round pan and then torted it. I used most of the diabetic icing to fill, frost and add border to it. I 'd say it would have served 12-14.

With the left over icing, I made a few pudding parfaits with sugar free chocolate pudding...just layered the pudding and the icing and topped it with berries. Yummy!

They won't be in your cake mix aisle with the rest of the cake mixes. As I diabetic, I usually find them in a special section with Diabetic ONLY foods. Just a small section with Sweet and low brand mixes, some other brand of low carb or sugar free chocolate bars, sugar free syrups, etc.

Health food stores, at least mine, have Stevia brand all natural sugar substitutes as well. thumbs_up.gif
