Sugar Cookie Recipe With No Eggs?

Does anybody have a recipe of sugar cookie with NO eggs. I have to make some for my friends son who is allergic to eggs!

Here is one that I use for my friends' son who is allergic to eggs. I double checked with her to make sure that there was no problem with cream cheese and butter. They do spread a little, although the person who gave them to me said they didn't. Maybe I do something wrong. But they are YUMMY!!! Good luck!

1 pkg. 8 oz cream cheese
3/4 cup unsalted butter (1 1/2 stick)
1 cup granulated sugar
2 tsp vanilla
2 1/4 cup flour
1/2 tsp baking soda

Preheat oven to 350 degrees. Beat cream cheese, butter, sugar, & vanilla on med. till well blended - add flour and baking soda. Mix well. Cover and refrigerate for at least 30 min. Roll to 1/8 inch thick on lightly floured or powdered sugar surface. Cut & place onto greased or parchment lined baking sheets. Bake for 10 to 12 min. or until edges are lite brown.

You can sub almond extract for the vanilla to make almond cookies too.

This is a Barefoot Contessa recipe for rolled shortbread cookies which is also egg free. I make these very often. Plain, sandwiched with jam or buttercream, dipped in chocolate, they are always a hit.

I most often roll them slightly thinner and use a smaller cutter and therefore bake only for 15 or so minutes. Make your own adjustments as well if you change the thickness and/or size of the cookies. The shapes come out extra-sharp if refrigerated after cutting. They keep in the fridge for a week after they are cut. Store in an airtight container, layered between sheets of baking paper and bake as you need.

3/4 pound unsalted butter at room temperature
1 cup sugar
1 teaspoon pure vanilla extract
3 1/2 cups all-purpose flour
1/4 teaspoon fine salt

Preheat the oven to 350F.
In the bowl of an electric mixer fitted with a paddle attachment, mix together the butter and sugar until they are just combined. Add the vanilla. Sift together the flour and salt then add to the butter-sugar mixture. Mix on low speed until the dough starts to come together. Dump onto a surface dusted with flour and shape into a flat disc. Wrap in plastic and chill for 30 minutes.
Roll the dough 1/2 inch thick and cut with a 3-inch heart shaped cutter. Bake for 20-25 minutes, until the edges just begin to brown.

Found this one online at www.bbc.co.uk in the recipe section awhile back....never tried it though.

500g/1 lb 2oz icing sugar (powdered sugar, I guess), sifted
2 lemons, juice only
3 - 4 tsp glycerine

put sugar in bowl of mixer; gradually add lemon juice & glycerine, beating continually, until the texture & flavor are as you want.

Making cookies without eggs is easy and if you start looking, you will find a lot of recipes on the internet.
My DD is Vegan and I have had to cook without eggs (and a lot of other things... icon_confused.gif ) when baking or making other dishes.

There is also a product called "NO EGG" - don't know if you can get something like that in the US. It is a powder that is not egg but acts like egg would in baking.

A lot of egg substitutes can be mashed banana ( but be wary of flavour mixing), apple juice, tofu etc...
