What do you charge for your sheet cakes? 1/4, half, 3/4, full...?

I charge $40 for my half, $30 for my quarter, never done a full or 3/4, though.

I just sold my first 1/2 sheet cake (12x1icon_cool.gif for $50. I really did not know how much to charge either. I just took a guess.

I refuse to use terms like "half' or "quarter" because most clients have no idea how big the cake is. They just use the lingo.

My sheet cakes are based on single layer, 2x2" servings @ $1.50 per serving. Therefore.....

11x15: 35 servings / $50
12x18: 54 servings / $80
14x22: 77 servings / $115
18x24: 108 servings / $160

I don't do anything smaller than 11x15. THey are welcome to cut them any size they want, but these are the numbers I use to determine price.

That's so funny (yes, my prices are higher than Walmart) I can't make cakes as cheap as Walmart. I would have no profit!!

I don't charge per size I charge per piece. My serving sizes are 2"x2"x2" for single layers and 1"x2"x4" for double layers.

$1.50 Single layers only buttercream
$2.00 Double layer, buttercream icing, buttercream filling
$2.25 Double layer, buttercream icing, one layer of filling
$2.75 Double layer, buttercream icing, three layers of filling

These are for basic decorations and my standard buttercream and some basic fillings. Different icings or higher end fillings cost more.

I may adopt your way of charging....per serving, and stop referring to them as "1/4, 1/2, etc"....makes a lot of sense! However, I can't get the prices here that you charge, although I think your pricing is more realistic!

Wow...I must be cheap. I charge 20 for a quarter sheet. 35 for a half. and 70 for a full sheet. Cant charge anymore because some phenominal bakeries that have been in business for over 40 years charge about the same, and peoples rationale is....why pay more if I can go to that bakery if they could get it cheaper there. My prices are only about 2 dollars different on many of their products. Now if the cake is extremely detailed and such, I charge more for labor.

Your pricing is a little more in line with mine....currently I charge the following:
1/4 sheet - $20 (9x13)
1/2 sheet - $40 (11x15)
3/4 sheet - $50 (12x1icon_cool.gif
full sheet - $60 (two 11x15's)
texas sheet - $70 (two 12x18's)

I also have a phenominal bakery in town and they truly have a wonderful product and icing, however, I offer more options for decorations n' such.

Hm. I never heard of a Texas sheet. That's a great ideaicon_smile.gif What do you use for a cake board with a cake like that? Do you just go with plywood and cover that?

Luckily, there's a local cake shop that has cake boards and boxes (no lids) for them! I very rarely get an order for them, usually just full sheets. It would probably be cheaper for me to place them on a piece of masonite....I think those large boxes are nearly $4-5!

Also....I made-up the term "texas sheet"! Thought it was fun!

Yes, there's such thing as a Texas Sheet Cake that's baked in a jelly roll pan with a heavenly chocolate frosting! YUM!.....my texas sheet reference is just to my largest sheet cake!

That's the best I can do here in NE Ohio!
