Bread Flour Instead Of All Purpose

AI literally just realized that I used unbleached bread flour instead of unbleached all purpose flour for a vanilla cupcake order I had a couple weeks ago. I noticed while making the batter that it was thicker than usual(but smoother) and tan instead of white. Then while baking, they didn't rise as much which was OK bc it usually rises a lot....almost too much. They came out almost brown in color BUT they were the best vanilla I've ever made as told by everyone. Still super fluffy, tender, moist, and more flavorful than usual. They were completely gobbled up. Go figure?!So my cake disaster turned out not to be a disaster after all. If it happens to you, don't fret.

this is a nice 'accident' i usually hate myself when i blow the flour-- good for you

AI always have a little extra and taste before I send things out. If they were nasty, I would've been in a fetal position crying in the corner haha. I had been spending countless hours making fondant decorations all week and that night I had no sleep. Doing it again would've killed me. Chocolate cupcakes were ordered too and I nearly screwed those up too due to no sleep....poured in almost all the cupcake liners then realized I only added half the amount of water. I then poured all batter back into bowl and added the rest of the water....phew!!!!

That same thing happened to me last week! 

I say it's the best mistake I've ever made!! Now I use half AP flour and half bread flour in my WASC. DELICIOUS!!

Yep I really need to do that. I've just had a lot on my plate lately. My mom's sister in the icu who I told you about unfortunately passed about a month ago. The night before the funeral my mom fell down the stairs and severed her ankle...bone was poking through skin and everything. I had to call 911. She had to have several screws, plates, and pins put in and can't work for 3 months or do really anything. So I've been juggling taking care of her around the clock as well as my other work.

I'm glad the bread flour is working for you! Blessing in disguise :-). Is your wasc from a box or homemade?(no judgment just curious if it works with box mixes too)

Lol, wow. That is a great turn out. If I noticed I got bread flour instead of AP, I would probably freak out and do a quick run to the store to return. Glad you were able to make it work though!

I didn't realize until 2 weeks later lol. The batter was denser and darker than usual but I assumed it was bc I was using unbleached all purpose flour for the first time lol. If I noticed before baking I would've definitely freaked and started over lol.

and your mom's broken leg -- omg don't say [I]severed[/I] and[I] poking through[/I] -- whoa she messed it up good -- hope she is recovering well -- were you there when she broke it or did you have to drive over where every moment is an individual eternity -- i can only imagine how difficult it has been lately -- so she is probably not fully up and around yet -- about another month to go until she can go back to work?

Sorry that I'm just seeing this. Thank you so much for your concern and condolences. Mom had had a very tough road but returned to work about a month ago with a boot and cane. Then about a couple weeks ago she had surgery to remove the screws and pins. She is healing as scheduled though and doing better by the week :-). I happened to be there actually while it happened...saw it too. I called an ambulance as soon as it happened. Glad she's doing better now though bc it was very scary. The surgeon said it was one of the worst breaks he has ever seen.
