Kathy

I get Sainsbury own cooking choc from the baking bit,  I use either the white or the milk both have worked well for making the ganache.  3-1 for white and 2-1 for milk.

It does say on the site it can take 5-7 days but mine was only about 3 I think.  I ordered it early A week before needed) so wasn't panicking yet and it already arrived, so pre panic would be day 2-3 worried would be 4-5 and panic would be 6-7 lol

AHiya Bashini, wondered where you were, I may appear daft but not sure why there are two pieces. Yes I'd love an air brushing thingy too. In my local cake Dec shop she's selling one for £99 , is that good or not?

AHi Barbara... Once you roll the paste, I use flower or 50/50, put it on the bigger part of the mould and put the other part on the top the flower side down and then using a rolling pin push hard while you are rolling and make sure by doing this you get a clean cut around the lace. Not sure whether I have explained it properly.... Did you get a paper with it on how to use it?

Regarding the air brush, I really want to buy the Dinky Doodle one? Read lot of good things about it.

Nannycook thanks for the recipe!

Jealous of the cake decorating stuff you've all bought! I've put a stop to my cake spending. Spent far too much lately though I want lace molds, the stuff that makes the lace, an air brush machine, an edible printer... you get the picture.

Hmm I better place an order with SPD because I want to make a cake for easter, and I've been wanting to try out their products.

Morning all,

I got the dinkydoodle airbrush for Christmas but haven't used it yet.  I need to get it out and have a play but I would really like to do a short course on using it first.

Hmm I might make a cake for easter weekend and use it.  I am off to cake international this weekend so will see if I can see a good demo whilst I am there.

I know cake stuff had it for £89 when my Mum bought mine for me.  Not sure if its still on offer or not though.

AOoo,I know but I cant justify spending that amount especially as probably wouldn't use it that much, and now I'm partime, but hubby wouldn't say a word bless him. Still wouldn't tho, I can see how you would use it more, so you get it, think of how your cakes will look?

I wanted one as its an investment in the business.  I am not ready to start selling my cakes yet as I don't want to enter the market at the lower level where you get all the 'I want a cake for a tenner' people.

I want to be worth the price tag I will be charging and be able to get the orders in.  There is one decent cake shop round here, I know there is a few home bakers but they are mostly the 'tenner' bunch.

I am hoping to start up when my smallest small goes to school next year.  Its really hard to do when he is around and it feels unfair on him as I am preoccupied with cake.

AMorning!

Maisie I ordered my SPD on the 3rd and it arrived yesterday afternoon, hopefully yours will arrive soon x I'm going to get mine out tomorrow for a play :)

Love the look of that lace mould Nanny, really pretty! I think I saw Zoe Clarke use one like that on her Craftsy class and it looked great! I'm saving for a new Cake Lace mat at the moment :)

Hoping to get to Cake Intl on Sat, so goodness knows what I'd end up bringing back LOL, my wish list keeps getting longer!

Your little fondant cakes look fab Siany, really bright and bold!

AGood morning lovely people :-)

Maisie it took over 2 weeks for my SP to arrive... although that is to Northern Ireland..... it was probably transported by Donkey some of the way.....

I'm looking at the dinky doodle too, I got a cheap air brush a few years ago and it's so annoying I never use it! I think if it's easier/more reliable then I will actually use it! Did you see the airbrushing cocoa butter tutorial? I think that looks great, the watery colours seem to take ages to dry for me......

I don't have a Dinky Doodle airbrush (not sure of the make of mine!), but I did buy some Dinky Doodles airbrush colours...  just black and white (for the chess board cake).  And in the end I only used the black.

BUT

It is brilliant.  I don't know of any other airbrush colours that can be used on chocolate.  This was amazing.  Dried quickly and didn't come off on my fingers when I lifted the pieces after airbrushing.

Highly recommended!

Morning greetings to everyone!  I was all pleased with my purchases and then you all start going on about airbrush sets.........  I just want one soooo bad but I set myself a goal of not getting one this year.  So, tomorrow when I'm at Cake International, I will be making a BeeLine to Claire Bowman for sure.  I am definitely getting lace moulds instead - by the time I have finished choosing, they will probably cost more than a blinkin' airbrush kit!  (Shh don't tell my other half!).  So for the time being, it's the good old paintbrush for me.

Crazy-Gray:  I did see the cocoa butter tutorial - I also researched painting with cocoa butter befrore I found CC because it is supposed to be better than with spirit - Mich Turner has a YT on it.  Has anybody tried it?  Was it easy?

Siany - I know what it's like to have littl'uns around your feet.  I used to have my own business (albeit small) but eventually had to stop because as my kids got older, they required more ferrying around to various clubs, etc.  Get a good network of mums and you should be fine.  My daughter is now obsessed with cake making too.  She has set me up a website (not giving it to anyone as it's not at all finished - most of the pages are still in Latin, lol!) and on the introduction page she talks about how when she was really small she used to watch me making cakes and wanted to do the same (funny, she never told me in person!)  - so maybe your little one will get the bug too

ADayCakes, if you want to know more about cocoa butter painting head over to see Tracey Manns stand tomorrow if you get a chance, she specialises in chocolate paste and does loads with it, including painting with cocoa butter. Plus she's really really lovely, I did my PME Sugarflower diploma with her and it was fab fun!

Oh thanks Mel!  I have booked a demonstration with her tomorrow morning on chocolate shoes!  I tried some of the chocolate paste last year and it was the first time I had tasted it - much better than it sounds imo.  Been researching making it myself - have promised DD a couple of days home tutoring in the summer when she's back from uni.  Moulding chocolate is definitely something we want to "get into".

A separate appeal now.....has anybody got the recipe for making your own flower paste/modelling paste using denture fixture powder?  I have lost mine and am really looking for a good, strong, elastic paste recipe.  This one sounds odd but it did work (denture powder is OK to use still I hope?).

ADaysCakes I Paint with cocoa butter a lot! It's very forgiving; if you make a mistake you can scrape it off without leaving a trace, even if painting black on white, as it doesnt soak into the dry SP like colour &water/alcohol does.

I got pure food grade cocoa butter on ebay, it's a big block so I grated it in the blender lol, I mix a teaspoon full in a little jar (you know the cute ones you pinch from posh hotels at breakfast), add 2 drops of cooking oil and some petal dust then put in a bath of hot water until it melts. Honestly it's brilliant.

ABore da. :-) Thankyou Mel and Gray. It'll probably arrive today cos I'm gona be out all day! I think you're very lucky to have a donkey Gray, we have a three-legged mule in these parts! I'm itching to maka a cake now, I knew I would be. I've forgotten how much trouble the gluten free, nut free, banana free, artificial flavour free, cake free cake caused me. I've forgotten how crazy I was to make 3 cakes in 6 days. And the memory of washing up at 2am after the last cake is fading already! I'm so jealous of you who're going to cake international!

Thank you!  I am going to investigate this for sure.  I have some painting to do later in the year and I usually use vodka but the person I am doing it for doesn't partake of alcohol.  I might see if I can get some cocoa butter tomorrow actually at Cake Int.  Sounds like I should have converted ages ago to this!

Dayscakes, most of the alcohol (what little there is used) evaporates so I'm fairly sure this shoudn't be an issue? You can't even taste it :)

I actually have an alcohol allergy, it's not worth risking for me! I do agree, I THINK the alcohol does evaporate off, especially if using pure alcohol, but when I request no alcohol I expect none be used at all....

Thanks Cakejeanie and Gray - I will not be using alcolhol for this person since I would not wish to offend them and I agree that you cannot taste it but I would know it was there, you see.  If I cannot get on with cocoa butter I will find another way and not do any painting -  but I have been googling it for ages and I am definitely going to try the cocoa butter method.  The colours look really good too and I love the idea that you can scrape it off if you make a mistake (and I make lots of those!).

To make modelling chocolate you mix melted chocolate to liquid glucose.  Its a 2-1 method so 200 grms choc to 100grms glucose.  Add the glucose to the melted choc (white, milk or dark) and mix with a spoon, it'll come together really thick, once its too thick to stir then get your hands in.  You need to squeeze all the liquid out, its icky but a bit fun in a weird kinda way, all the liquid you are squeezing out is cocoa butter.  White choc will have the most come out as it has the highest percentage of cocoa butter in it in the first place.  You can dry it off with a clean muslin cloth or kitchen towel, keep working it till no more liquid comes out.  Its then ready to use.

You just use it the same as you would to make hand moulded sugarpaste flowers etc

Ooh you could keep the cocoa butter for hand painting!! :-)

I use corn syrup from amazon/ebay, you don't have to wring the cocao butter out with that, I bought wicked-goodies' book, it's wonderful and has all the recipes.

I didn't realise it was due to an alcohol allergy! Quite right- avoid the booze. I've heard of some using extracts instead of alcohol- lemon, vanilla etc. I've never tried it so can't say whether it's any good or not. Lots of threads on CC about it.

I'm currently looking at inspiration for a painted cake I would like to make for easter- any excuse to make a cake, including good ol' practice. Cocoa butter definitely sounds yummier than alcohol!

I've been meaning to try modelling chocolate- mainly because of the fact it blends seams. I'm dragging my feet about it because of all the factors I need to know first- how to make it, colour it, store it, etc etc etc.
