Seems like an ok site for information I only checked out the one section on rolling out cookie dough. I would like to point out that it's best to roll out dough between parchment or wax paper. Adding additional flour to roll out dough changes the texture of your cookies and makes them tougher.

Cake_Princess, I agree with you about not adding extra flour. I tried rolling between parchment and wax paper, but both drove me crazy. Now I use a Silpin (silicone covered) rolling pin on a Silpat mat. If it sticks at all I just pop the mat and dough on it in the freezer for a minute or so and then continue rolling. Then, when cookies are cut, I stick it back in the freezer for about 5 minutes, take it out, pop the cookies right out of the rest of the dough and put them on the pan. Works great with no added flour, but a little more of an investment, since you really need two silpat mats so you can be working on one while the other is in the freezer, plus the Silpin.
