How do I put fondant roses on the side of a cake without it falling off?
And if the cake is iced in buttercream instead of being covered with fondant will they stay on?

If you make them on lollipop sticks or heavy gauge wires and stick them in they should stay with no problems!

I use toothpicks...work like a charm.

Wouldn't lollipop sticks be too big?

Why would lollipop sticks be too big? I use them all the time. You can't see them when they're in the cake. I cut them down to just 2-3 inches when I'm feeling cheap....but why would they be too big? If you are talking about teeny weeny roses maybe?

Well, I think because of the centre bud, usually this is made on something really fine like a toothpick or a wire. I also use the wooden shiskabob skewers which are finer than the cookie sticks and can also be cut down. But it would depend on the size of your roses and that centre bud.
