Package of lady fingers
1/2 cup prepared strong coffee Stabilized whipped cream
Mascarpone cheese (you’ll need 2 parts cheese to 1 part whipped cream, by volume)
1/2 cup granulated sugar
3 tablespoons rum
Combine rum, sugar, and mascarpone in a medium bowl, and blend until smooth.
Add additional sugar/alcohol to taste, and then fold the whipped cream into the mixture.
Soak lady fingers in coffee for a few seconds, turning to coat all sides.
Place lady fingers side by side on bottom of several small glass cups.
Cover lady fingers in mascarpone mixture, and smooth surface with a spoon or small spatula.
Sift cocoa powder onto bottom layer.
Apply a final layer of lady fingers and mascarpone mixture to each glass.
Top layers with cocoa powder and chocolate shavings.
Chill until ready to serve.
