Pink Lemonade Cupcakes

For some reason, I was craving a pink lemonade cupcake and came up with this easy recipe using a white cake mix and a flavoured whipped cream topping.

Ingredients

  • 1 white Betty Crocker cake mix
  • 3 eggs
  • 1/3 cup oil
  • 3/4 cup concentrated frozen pink lemonade (thawed)
  • 1/2 cup water
  • Topping:
  • 500 ml of whipping cream
  • 1/4 sugar
  • 1 tsp vanilla
  • 1/4 cup concentrated frozen pink lemonade (thawed)
  • 1 Tbsp meringue powder
  • Little bit of red food colouring to make it pink

Instructions

  1. Mix cake mix with eggs, oil, water, and lemonade. Pour into cupcake liners. Bake as directed. For topping, whip cream with sugar, vanilla, meringue powder and a little red food colouring to make it pink. Slowly pour in lemonade. Whip until thick. Pipe onto cooled cupcakes. It is DIVINE!!!!!!!

My daughter loves pink lemonade and this sounds perfect. I will definately have to try this soon. Maybe for the end of the school year treat.

I am curious how well the whipped topping holds up? Have you tried just having it with a lemonade flavored buttercream.

Found a better recipe for the cupcake that makes it a little more solid. Add 2 eggs, 1 cup sour cream,1/3 cup oil, 1/2 cup pink lemonade concentrate to a white cake mix. Even better than the first recipe. I've also tried this sour cream recipe with coconut milk instead of the lemonade concentrate and 1 tsp of rum flavoring. Add the rum flavor and coconut milk to the whipping cream too and it is really yummy. * The whipped topping holds up really well if you use the meringue powder.

liked this recipe alot! Very different, light and lemony. I used powdered sugar in the icing, about 1/4 of a bag- enough to sweeten it.

I loved this recipe. I made this for coworkers at work but I did use Duncan Heinz cake mix instead and had to adjust for the differences. But they were a big hit. A diffinent keeper. And I will be trying the coconut version as well. Thank you.

I have limeade left from an event and will try this with the sour cream for a tangy "Keylime-ish" twist. Let you know how it turns out.

I don't use the first recipe anymore. I now use the sour cream recipe for my cakes too. It just gives the cake more body. I also used orange Sunny Dee or Strawberry Orange Sunny Dee drink as the 1/2 cup liquid and it gives it a very nice refreshing flavor. I was going to try pop but someone said it kind of gives it a chemical taste. I want to try Welches grape juice next.

I just tried this recipe this weekend, very subtle lemonade taste. I made a pink lemonade buttercream icing to go on top, perfect combination. thanks
