A quick and easy recipe is whipped heavy cream, instant vanilla pudding powder (sorry, I just eyeball it), and coconut extract or the syrups made for flavoring coffees.

Rose? I made some pistachio whoopie pies with rosewater filling and they were really good.
With the cardamon there too I might just go with a creamy filling and let it add more texture than flavour and not compete with the cake flavours though
