I have a wedding cake coming up on Oct. 4th. I am going to be out of town on a business trip the entire preceeding week. The cake is going to be a fondant covered cake with buttercream underneath. My question to all of you is how far in advance can I make this cake. I thought I had read on here before that some of you have made them up to a week in advance. If this is so how do you store them? Any ideas or information would be greatly appreciated.

Thank you all,

The cake can be baked, cooled and crumbcoated then frozen.

But, in my opinion, unless the cake is frozen, a week is way too long for a finished cake to sit, even in the fridge.

I agree w/JoAnnB......a week is too long icon_sad.gif
You can bake, fill, crumbcoat, and even cover w/fondant, then freeze but not just in frig.
