Maybe some of you have seen it before, but I have not... Two seasonal Pudding mixes:
Turtle! Yep, flavored like chocolate, carmel, & pecans
And
Spiced Pumpkin!
Just so happens I have use for both of them for the holiday season! Oh yes, and Sam's has out the Gheradeli Chocolate kits.
Anybody spotted any other goodies?

How do people use filling for pudding? Do you reduce the liquid? Since its pudding these cakes have to be fridged right?
How long will a pudding based filling be stable sitting out. Looking for some ideas for the holidays.

Pumpkin Spice is by Jello brand. I bought it but haven't tried it yet. My mom made a pie with it and said it was delicious!

I have used a recipe for fillings using pudding mix and whipping cream for a "mousse" type filling. My understanding is that the sugars in the pudding stabilizes the dairy and can be left out. I have done so on several occasions and not had any problems. HTH

I just take a regular size box of pudding and whip it up with heavy cream instead of using milk. It makes a very delicious and thick mousse-like filling. I do refrigerate the cakes to keep the mousse from souring. It might not be really practical for a wedding cake that will be sitting out for a while before being cut, but for a smaller birthday cake or anniversary cake, etc., where the customer can keep it in their own fridge until serving I think it'd be fine. Just make sure you tell the customer when they order it that it does need to be refrigerated.

I had wondered about the pudding snacks as well. I wrote to the company that makes them and was advised NOT to leave the pudding out unrefrigerated whether in a cake or by itself. I was told once you open the can, it has to be refrigerated. Just thought I would share this.

The Pumpkin Spice is awesome! I actually used in in a pumpkin bread recipe! It made it really moist!
I use pudding all the time whipped with bettercreme non-dairy topping. I don't have to refridge it then.

I have done the mousse for the pumpking spice pudding. I used it with the better crocker pound cake....deeeeelicious. I baked the pound cake according to directions. cut into small squares when cooled. put the amount of pound cake you wanna eat into a bowl. layer that with the mousse and then top it with cool whip...yummmm-o.
You should definitely chill a cake that has pudding in it for filling. There's too muich liquid in comparison to the sugar for it to be shelf stable. Leaving it at room temp for a little while won't hurt anything, but not over night.
Making it with Bettercream would be fine to leave out though since bettercream is able to be left out.
When you add the pudding mix to the cake is there any thing you need to add or subtract?

to the question of spotting other goodies (I just came from my local Hobby Lobby and they have):
- foam boards (both popular widths) on sale for 50% off (stock up!)
- cupcake silicone liners in markdown section for approx $3 (they are usually $10)
- superman cake pan for less than $4
- flag cake pan less than $5
note: in my HL you have to look where the disposable plastic cups/plates section for these great markdowns (not regular markdown section)
- and last...great molds and impression small mats in the clay section (I use for fondant work)
- secret tip: my fondant "brick impression mat" came from the dollhouse section (works awesome! - use the underside) crazy cheap with the 40% off coupon
I have the same mousse recipe that I wanted to try last night but wanted to try chocolate and all I had was vanilla....I want to go to WalMart and see if I can find those pudding mixes. They sound great!
