Christmas Honey Biscuits

Christmas is coming and I have started preparing lots of sweets for my friends and family. Here's my favorite recipe for the holidays, and can assure you that everyone will love it! Ingredients for Melomakarona - Honey Biscuits Biscuits (~ 50 pieces): 1 kg soft flour 250 g sugar (brown or white) 500 ml cooking olive oil (approx 1 1/2 glass) 350 ml orange juice (approx 1 glass) 1/2 tsp baking soda 1/2 tsp baking ammonia (ammonium bicarbonate) 2 Tbsp cinnamon 1 tsp grounded clove 2 Tbsp orange-tangerine zest 110g chopped walnuts (for garnishing) Syrup 150 g sugar (brown or white) 500 ml water 3/4 kg honey Preparation: 1. Preheat oven at 180 O C. 2. Mix oil with sugar in a bowl. 3. Dissolve the baking soda and ammonia in the orange juice (make sure you use a big container otherwise it will overflow), and add in the mixture. 4. Add in the cinnamon, clove and zest, and then slowly start adding the flour until you get a firm dough. Use your hands to mix the dough until all ingredients are well incorporated. 5. Get a small ball of the dough and use your fingers to create a disk shaped biscuit about 5 cm long and 2.5 cm wide. Fold the edges together along the wide side. Finish the shaping and place on baking sheet in a pan. This way you make sure the biscuits are baked evenly inside out. 6. Bake for about 30 minutes until biscuits are golden and brown. 7. For the syrup, mix the sugar, water and honey and bring to a boil. Cook on low heat for about 5 minutes, but do not let it thicken. 8. When all biscuits are out of the oven, let them cook down for a bit, and then place in a rimmed baking pan. Pour the hot syrup over and let them soak. This depends on how syrupy you like them. You can leave them from between a couple of hours and overnight. 9. When they soak enough remove from the pan and place in platter for serving. Decorate with chopped walnuts etc. 10. If you feel like it you can also deep some of them in dark or milk chocolate.
