Rustic Wedding Cake
I am Zaki from hot humid Singapore. I made my first wedding cake at age of 40 just 3 days ago! Never too late to learn anything new! Its a Rustic theme chocolate mud cake. I made the gum flowers 2 weeks in advance. Baked the cakes 1 week ahead. Then ganached them and froze them till 3 days before the wedding. I then transfered the cake to the fridge 2 days prior. Finally just a day before I iced it. The cake turned out beautifully though I did struggle to make the ruffles. On the wedding day I delivered the cake at 12 pm. I received a feedback a day later that by 5 pm the first tier has sunk. But the recipients love the cake nonetheless. I need to find a way to make my future wedding cake stand the heat. In the meantime here is my cake!
