Little Dummy Made Of Scraps
I had some extra time this week and scraps from other projects so I made this dummy cake. I tried out some new things for upcoming projects. The biggest surprise for me was that the dummy was more difficult to cover than a real cake! I tried to get sharp edges but it was so light that it kept shifting.

Alpha Cpnference Cake
This is a cake that I did for a local Alpha Conference. They let me choose the flavors and the design. It was a big cake (14, 10, 8) that was ordered on Friday and confirmed on Sunday so not much time for preparations. I would have loved to have done more with the globe on top but there was not enough time. Big cakes are so much different to put together. One thing that I learned on this cake is that you do not need to roll the fondant thin to get a sharp edge. The time was limited and the cake was big so I did not roll the fondant as thin as I usually do but still managed to get a sharp edge by using two fondant smoothers in a crimping fashion. Mango, carrot and cardamom cake flavors.

Yellow Rose And Music Sheet
This was a last minute order. The customer gave me a picture ( no reference of the artist) similar to this cake but with a red rose. The next day she called to let me know that the colour scheme was yellow and green so the rose had to be yellow :0). I like the way it turned put and she was very happy.

Beach Themed Cake With Cala Lilies
I?ve been doing so much buttercream that I FORGOT to make my buttercream undercoat stiffer for the fondant application and ended up with a mountain instead of a cake! So I had to do it over ? halving the liquid in the buttercream to get the sharp edges with the fondant (with buttercream undercoat). I rolled the fondant thinly and applied it to the stiffish buttercream iced cake and used a crimping motion with two fondant smoothers to get the edges sharp. This was a lemon cake with lemon curd filling, buttercream undercoat and fondant finish with fondant flowers and accents.

Thomas And James Cake
This is an 8 inch cake finished in butter cream with fondant accents and Edible Image. I am trying a new cloud technique with the butter cream where I marble blue and white icing it then apply it to the cake and then carve out the clouds and them fill the space with white icing. Then I smooth the cake. Just a little different than adding fondant clouds.

Beach Theme Cake
I got a call this morning for an urgent carrot cake with a beach theme for a tourist staying on Island. Glad that they found me and happy that my cake studio is just off my office so that I could work and decorate. I was sort of caught on how to describe my decorating business because it is not home based, but it is not full time and I can do it during work hours since I work for myself, so I am going to call myself an office baker. Butter cream finish with fondant accents baked and decorated the same day. Theme

Gluten Free Cake
I was asked to do a gluten free cake. I said sure. I thought that I would jut use my favorite chocolate cake recipe and use all purpose gluten free flour. Well when I check the cake in the morning it was way too soft. So I had to re-bake the cake( this time with more flour. So I had 3 hours to bake and decorate.
