Tinkerbell Birthday Cake
This is the Tinkerbell cake I made for my daughter's 4th birthday. The mushrooms were made of rice krispie treats covered and decorated in coordinating colours of fondant. The top of the mushrooms were made in a small pyrex mixing bowl and the stems were made in large yogurt containers. The tree stump was made from two 3-inch layers of chocolate cake with chocolate buttercream between layers. I crumb coated the tree stump and left it overnight before I covered it in more chocolate buttercream. Then I used a grey buttercream to make the indentations of bark. I pulled the grey buttercream through the chocolate buttercream using a toothpick. If doing this, make sure to add some swirls and knots into the wood grain. The tree stump has a couple of tree rings on the top along with "pixie dust" (edible gold and pearl shimmer dust). It has also been adorned with royal icing flowers and leaves (made a couple days in advance). After adhering the mushrooms and tree stump on the cake platter (a 20" x 20" piece of white mdf with finished edges) with buttercream icing, the platter was covered in a thin layer of green buttercream and then with coconut coloured with green food colouring. Then the little pink royal icing roses were set out to read "Happy Birthday". It didn't show up as nicely as I had hoped, so I used white royal icing to write it over the roses. This cake was a complete success. Even the boys at the party loved it (just don't eat the pixie dust - apparently it doesn't taste good when you have so much!). The best part is that it doesn't need to be perfect. No mushroom or tree stump is exactly the same! :)

Topsy Turvy Wedding Cake With Fondant Rose Bouquet Topper
This is a cake I finished today for a friend's wedding. The bottom tier is chocolate, the middle tier is rice krispie treat, and the top layer is white cake. I used homemade marshmallow fondant to cover each tier before stacking. All the roses and pearls are fondant too. I did the flourish on each tier in contrasting color and the best part is that the flourish helped hide a seam in the fondant of two of the tiers! Yay! Don't forget to use dowels pushed into the middle of the bottom tier (I used 4) to support the heavy rice krispie treats above it. I was so happy with how this cake turned out and the bride, groom and guests loved it too!

Graduation 2010
Graduation cake and cupcakes I made for my nephew last June. The cake is just a 9" round cake cut on an angle. The top of the grad cap is chocolate that I melted in a double boiler and spread out on parchment paper. I put it in the freezer for a couple of minutes, took it out and cut it to a square shape and put it back to harden for about half an hour. The tassel was made out of licorice whip. The mini grad caps were made out of mini reese peanut butter cups covered with little squares of chocolate (made the same way the larger cap top was made). It was held together by chocolate butter cream icing. I used gel icing (little tubes) to draw the lines around the grad cap to give it more definition. This was a fun cake to make!

Barbie Ballerina Cake
Made this Barbie cake with two layers of 8" round white cake and white cake baked in a small pyrex bowl. It would have been better to have three layers of round cake because the Barbie was too tall and I couldn't take her legs off. I got creative and cut a hole in the cake board and put the cake on a pedestal (upside down blender lid!) so I could push her feet through the bottom. Decorated with buttercream icing. My girls think she is beautiful and I have had lots of requests by them to make another!

Ring Pop Cake
My daughter LOVES ring pops so I tried my hand at making her a cake in the shape of one. I was very happy with how it turned out! I used two different types of cake. I used chocolate cake for the lollipop part - used a Wilton soccer shaped pan and cut it down to the lollipop shape. I did a practice cake with a layered square cake cut to the shape and it didn't work as well as the soccer pan. The "ring" part was made with vanilla round cake. I cut it close to the halfway mark with the smaller half set on it's cut edge and then I used the remaining larger half to cut out the pieces that would come around the finger. I made and colored my own fondant (the green was done at 1:30 in the morning the night before her party! LOL) and covered each piece separately, using buttercream icing to attach the pieces together. Once it was all together I filled the ring with ring-pops. I also made several cupcakes, iced them and stuck a ring-pop in each one. These were placed around the main cake. I would not recommend making this cake unless you are willing to let your child (and all of them) have a couple of ring-pops! ;)
